Chocolate Weetbix Slice

Ingredients

Slice

  • 120 g margarine or butter, melted (6 heaped tbsp)
  • 5 weetbix
  • 1 cup plain flour
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1 cup desiccated coconut + additional for sprinkling over the top
  • 2 tbsp cocoa powder

Icing

  • 1 cup soft icing sugar
  • 2 tbsp cocoa powder
  • 40 g margarine or butter, melted (2 heaped tbsp)
  • 2 tbsp milk

Instructions

  • Preheat oven to 180°C and line a 22cm square baking pan with baking paper.
  • Crush weetbix into a large bowl then add flour, baking powder, cocoa powder, coconut and sugar and stir to combine.
  • Add melted butter and stir well until the mixture is no longer dry.
  • Transfer mixture into baking pan. Using the back of a spoon press the mixture firmly to each side and into each corner until the mixture is level.
  • Bake for 15 - 20 minutes, or until slightly browned on top.
  • Meanwhile make the icing by combining the sugar and cocoa powder into a medium bowl. Stir to combine then add the melted margarine and milk and stir or whisk until smooth.
  • Once cooked remove slice from the oven, leave in the baking pan and while hot spread the icing over the slice. Place in the fridge to cool for 90 minutes. Once the icing has set sprinkle extra coconut over the slice, If desired and remove the slice from the pan and cut into 16 pieces.
  • Store in the fridge and enjoy!
